Ingredients
- 2 Tbs. butter
- 3 Tbs. all purpose flour
- 4 cups lowfat milk
- 3/4 tsp. salt
- 1/2 tsp. dry mustard
- 1/4 tsp. ground cayenne pepper
- 1 lb. broccoli florets
- 1/2 cup red bell pepper, chopped
- 6 ounces sharp cheddar cheese
- 2 Tbs. chives or scallions, chopped
Directions
- Melt butter in a large saucepan over medium heat;
- Add flour; Cook and stir until bubbling, about 30 seconds;
- Add milk, salt, mustard, and cayenne;
- Bring to a simmer, stirring frequently;
- Add broccoli and red pepper;
- Return to a boil;
- Reduce heat and simmer for 15 minutes, stirring occasionally;
- Add cheddar cheese and simmer until cheese melts;
- Serve with a topping of chives or scallions.
