Broccoli Soup

Makes 3 servings

Ingredients

  • 2 Tbs. butter
  • 3 Tbs. all purpose flour
  • 4 cups lowfat milk
  • 3/4 tsp. salt
  • 1/2 tsp. dry mustard
  • 1/4 tsp. ground cayenne pepper
  • 1 lb. broccoli florets
  • 1/2 cup red bell pepper, chopped
  • 6 ounces sharp cheddar cheese
  • 2 Tbs. chives or scallions, chopped


Directions

  • Melt butter in a large saucepan over medium heat;
  • Add flour; Cook and stir until bubbling, about 30 seconds;
  • Add milk, salt, mustard, and cayenne;
  • Bring to a simmer, stirring frequently;
  • Add broccoli and red pepper;
  • Return to a boil;
  • Reduce heat and simmer for 15 minutes, stirring occasionally;
  • Add cheddar cheese and simmer until cheese melts;
  • Serve with a topping of chives or scallions.
