CranOrange Bread

Makes 16 servings

Ingredients

  • 2 cups all-purpose flour
  • 1 cup dry oatmeal, uncooked
  • 2 tablespoons fructose
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup skim milk
  • 3/4 cup egg substitute or 3 whole eggs
  • 1/3 cup unsweetened orange juice
  • 1/4 cup vegetable oil
  • 1 tablespoon grated orange peel
  • 1/2 cup chopped cranberries, fresh or frozen
  • 1/4 cup chopped nuts


Directions

  • Heat oven to 350°;
  • Grease and flour 9 x 5-inch loaf pan;
  • Combine first flour, oatmeal, fructose, baking powder d baking soda;
  • Mix well;
  • Set aside;
  • Beat egg substitute, milk, orange juice, vegetable oil and orange peel until thoroughly mixed;
  • Add to dry ingredients, mixing until moistened;
  • Stir in cranberries and nuts;
  • Pour into prepared pan;
  • Bake 60 to 65 minutes or until toothpick inserted in center comes out clean;
  • Cool 10 minutes; remove from pan;
  • Cool completely.
