Chicken Poached Fish

Makes 4 3.5-oz servings

Ingredients

  • 1 1/2 cups chicken broth
  • 1 medium onion, chopped
  • 1 tsp. lemon juice
  • 1 Tbsp. dried parsley
  • 1 lb. cod filets


Directions

  • Combine broth, onion, lemon juice, and parsley;
  • Bring to a boil;
  • Place fish in boiling liquid;
  • Reduce heat to low;
  • Cover pan;
  • Simmer until fish flakes easily when lifted with a fork, about 10 minutes;
  • Using slotted spoon, carefully lift fish to serving plate.
