Ingredients
- 3 cups pork roast, cooked and cubed
- 2 potatoes, peeled and chopped
- 1 large onion, chopped
- 1 15-oz can navy beans, rinsed and drained
- 1 14-1/2 oz can no-salt-added Italian diced tomatoes, undrained
- 4 cups water
- 1/2 cups unsweetened apple juice
- 1/2 tsp. pepper
- Minced fresh basil
Directions
- In a soup kettle, combine all ingredients;
- Bring to a boil;
- Reduce heat;
- Cover and simmer until vegetables are crisp-tender, about 45 minutes;
- Sprinkle with basil.
