Mashed PseudoTatoes

Makes 6 servings

Ingredients

  • 1 medium head cauliflower, cut into florets
  • 1 cup shredded cheddar cheese
  • ½ tablespoon sour cream
  • ½ teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 tablespoons real bacon bits


Directions

  • In a medium pot, put cauliflower florets in a steamer basket and place in 2 inches of water;
  • Cover and steam for 4 to 5 minutes;
  • with water and bring to a quick boil;
  • Lower heat to simmer and cover, cooking another 10 minutes or until soft;
  • Drain and  transfer cauliflower to a bowl and mash, either in a blender or mixing bowl until creamy;
  • Blend in garlic and onion powder, sour cream, bacon bits, and ½ of the cheese with a fork until well-blended;
  • Sprinkle remaining cheese over the top;
  • Microwave for approximately 1 minute, or long enough to melt the cheese nicely on top;
  • Serve hot.
