Roast Pork Soup

Makes 9 servings

Ingredients

  • 3 cups pork roast, cooked and cubed
  • 2 potatoes, peeled and chopped
  • 1 large onion, chopped
  • 1 15-oz can navy beans, rinsed and drained
  • 1 14-1/2 oz can no-salt-added Italian diced tomatoes, undrained
  • 4 cups water
  • 1/2 cups unsweetened apple juice
  • 1/2 tsp. pepper
  • Minced fresh basil


Directions

  • In a soup kettle, combine all ingredients;
  • Bring to a boil;
  • Reduce heat;
  • Cover and simmer until vegetables are crisp-tender, about 45 minutes;
  • Sprinkle with basil.
