Beef & Noodles Fajitas del NoCarbo

Makes 2 servings

Ingredients

  • 1.5 lb. sliced steak
  • 1 cup red sliced pepper
  • 1 cup green bell sliced pepper
  • 1 cup sliced onion
  • 2 tablespoons fajita seasoning
  • 2 tablespoons butter
  • 4 tablespoons sour cream
  • 8 tablespoons guacamole
  • 5 ounces grated cheddar cheese


Directions

  • Using a large skillet, sauté onion, peppers and seasoning in butter until tender;
  • Remove from skillet;
  • Cook beef in the now-empty skillet until tender;
  • Mix in peppers and onions until heated through;
  • Remove from heat;
  • Sprinkle grated cheese over the beef strips;
  • Serve with sour cream and guacamole.
