Chocolate Flan

Makes 6 servings

Ingredients

  • 2 eggs
  • 3 egg yolks
  • 1 1/2 cups heavy cream
  • 8 packets Splenda
  • 1 cup water
  • 2 teaspoons chocolate extract
  • 1 tablespoon ginger


Directions

  • Preheat oven to 350°;
  • Boil water enough to fill half a roasting pan;
  • In a medium bowl, combine all ingredients;
  • Mix on Medium speed until smooth;
  • Pour into a shallow quart baking or casserole dish;
  • Pour boiling water into the roasting pan;
  • Place baking dish inside the roasting pan so that water covers approximately half the dish;
  • Bake for 35 minutes until a fork inserted into the middle comes out clean;
  • Remove dish from pan and set on stove to cool to room temperature;
  • Spray cooking spray on a piece of plastic wrap and lay directly on top of the flan;
  • Refrigerate for approximately 2 hours.
