Ingredients
- 1 medium head cauliflower, cut into florets
- 1 cup shredded cheddar cheese
- ½ tablespoon sour cream
- ½ teaspoon garlic powder
- 1 teaspoon onion powder
- 4 tablespoons real bacon bits
Directions
- In a medium pot, put cauliflower florets in a steamer basket and place in 2 inches of water;
- Cover and steam for 4 to 5 minutes;
- with water and bring to a quick boil;
- Lower heat to simmer and cover, cooking another 10 minutes or until soft;
- Drain and transfer cauliflower to a bowl and mash, either in a blender or mixing bowl until creamy;
- Blend in garlic and onion powder, sour cream, bacon bits, and ½ of the cheese with a fork until well-blended;
- Sprinkle remaining cheese over the top;
- Microwave for approximately 1 minute, or long enough to melt the cheese nicely on top;
- Serve hot.
